I am curious, why is the red channel so much sharper?

Same reason the sky is blue-shorter wavelengths (blue) are scattered more than longer ones (red), so bad seeing affects blue more than red.

A while back I commented on a handful of nice warm/red stars in the Double Cluster and how one in particular (left of center, through a Newt') always seems clear, steady and sharp. I guess your explain also explains how it remains so sharp and still.
