What to look at with 10x50 binos?

Look towards Perseus, Alpha Perseus to be exact, a lovely open cluster, or the constellation Auriga, there are a few clusters there, to the left of Cassiopaiea you can find the double cluster, for a list of binocular targets subscribe to binocularsky.com monthly newsletter. The light pollution in your sky will make a big difference. M51 is visible in 10x50's if you have decent skies. You could follow some of the brighter variable stars. You need a good star atlas as there are plenty of open clusters and several globulars. baggywrinkle's advice is good as there is an awful lot you can see from a dark site.

First thing to look for is a dark site, easy to reach with binos. 10x50s will theoretically show all the Messiers though some will be too small to be interesting. My first view of M104 was with 10x50s from Greece and it was unforgettable - the Sombrero shape was clearly visible. At a light polluted site the galaxy might not be visible at all, in binoculars or telescope.
