My guess would be an LM317 with relevent components not the most efficient method but quite safe.

I'm confused now Mark, are you going for a 240volt or 12volt supply ?

Thanks for all the comments - plenty to think about there. I was going for a 240v mains supply, although I may consider a 12v supply in the future when if I go more mobile with the kit - at the moment I have easy access to the mains, so am using that. I'll just stick to batteries for the time being while I do a bit more reading/research around the options!
