Nice start :) I think the main thing here is to get more data. Maybe shorter subs and a lot more of them. You may be able to get more control of the star bloat that way. With the enormously bright Alnitak you need some very careful processing. One technique is to take two sets of data - one with long exposures to pull out the nebulosity and the other of much shorter subs to cover the brighter parts. These are then combined in the image processor software with judicious use of masking to deal with the bright parts.

For the more experienced, the use of narrow band filters of 2 or 3 different colours which are then combined to form a colour image, really helps with these very bright stars.
