Would Sharpcap be better than....?

I don't think Sharpcap has an option to capture raw (mono) data files (might be wrong). In IC capture you can capture a raw file and then later process the file in registax to restore the colour. Capturing in mono and processing the colour data later improves the frame rate.

IC Capture is only for TIS DMK/DBK/DFK cameras. SharpCap is for webcams, webcam-alike, ASCOM and Basler cams. For TIS cams you may try FireCapture - FireCapture which gives more than IC. Capture (or SharpCap) like filter profiles (gain, exposure time saved for every filter), filter wheel control, self-guiding and few other things :)
