bayer question

On a lot of modern DSLR's and wecams the sensors record colour information using the bayer (rgbg) layout does anyone know how they record the full sensor data for a monochrome image? Do they use the whole sensor without colour information or do they simply take the bayer colour sensor values and convert them in software?

A DSLR always presents a colour image. The de-bayering alogrithm makes a "final" image "pixel" based on the RGB distribution in the surrounding pixel area.

The pixel you finally see is NOT one of the physical RGB pixels but a generated colour pixel.
