Any advice on what eyepice to use on the above telescope ! I have the original 1.25" 40mm but would like to know how best to achieve the largest field low power view through this F10 scope.

Probably a 2" diagonal plus a 41mm Panoptic eyepiece. That would give you a 1 degree true field of view which is about the max you can get with an 11" F/10 scope.

Yes and to get the maximum FoV possible you have to remove the 3.25" to SCT thread adapter and get a 2" push-in visual back that attaches directly to the 3.25" threads. The SCT thread itself becomes a bottleneck otherwise.

The LP EP I use with my CPC1100 is a Meade series 5000 40mm super plossl (60 deg apparent field). Any more than that & vignetting is an issue, in any case I personally find 60 deg apparent is as much as my eyes can comfortably use.
