2-way or 3-way tripod

Do you mean the head? If so I don't think there is any advantage in using them. 3 way heads are primarily used by photographers to flip the camera on its side, to change between portrait and landscape shots, so the extra motion isn't much use with binoculars.

I have a 3 way head on my tripod but I replaced the arm with a bolt to change it to a 2 way head because I got tired of grabbing the wrong arm (and knocking it) in the dark.

That's not to say 3 way heads aren't any good btw. I'm just saying that the extra motion offers no benefits (as far as I'm aware) when observing with binoculars.
