I'm not familiar with that particular scope but if it is the same as most GoTo's once aligned properly and then targeted on an object (Vega, M42 or Jupiter for example) it should track that object without you having to do anything else.

As far as tracking rates go, use Sidereal for any celestial object other than the Moon (use Lunar for that). Sidereal compensated for the Earth's rotation. The Moon also has what could best be described as "proper motion" in addition - hence the different Lunar rate.

Some GoTo's also allow custom tracking rates (for things such as comets).
