Is there a reason other than the extra money people seem to use the Evostar 80ED over the ED100/120 ???

Yes. Longer scopes require a more precise mount and show a narrower field of view.

The 100 is a slower speed as well - it's a f9, where the 80 is f7.5

I think the difference in price (new), between a 80 & 120 is almost double.

chromatic aberration, the evostar ed80 does not suffer from it also its a faster scope and faster still when you use the focal reducer all this matters when imaging you don't get stars with purple hazy edges and you cut your imaging time down greatly with a faster focal length.
