Muddy Jupiter

I was trying out a Bahtinov mask for the first time last night. I focussed on Vega and adjusted the image until it was symmetrical, then slewed over to Jupiter. On screen the image looked really good and I was chuffed not to be having to tweak the focussing (a chore with my bouncy mount and a Mak focussing knob). After stacking about 500 of 2000 frames, though, the image was rather muddy and soft. Seeing was poor, but is there anything I can do to rectify this?

I tried unsharp mask in Photoshop, which helped a little, but I'm a bit disappointed with the overall level of detail.
