I am a real beginner to look at the night sky. I am going to Ireland for the Christmas period , Co Waterford in fact. I know that the night skys are very clear and would be a great opportunity to look at the sky at night. My question is : are there map available that can help with identifying what I might see

For your phone you could try Google sky map (point it in the direction you're looking) or sky safari or stellarium. I use Google sky map on my phone, stellarium on my computer and I hear safari is good.
Good things to look for at the moment are the andromeda galaxy(m31) and the great orion nebula(M42) and perhaps M45, the pleiades. all naked eye Objects under the right skies. Even better through binoculars.
