Very nicely captured, pity about the seeing, but there is some detail showing on Mars. 👍
Total cloud here for the disappearance but clear for reappearance, so I watched through binos, and grabbed a few pics with my camera through the dirty window! It was too cold to even open the window!
I missed my first ever occultation due to being a nooby, I hadn't realised that Saturn was to disappear behind the dark part of the Moon! lol I did catch a Saturn graze though years later, and saw Venus
reappear from occultation. Great events to see.

My answer to your question is 'with great difficulty these days'!
Actually the way I do it now is using the out of focus donut. I first centre Jupiter in the finder scope, and confirm that it is centred in a 25mm eyepiece. I then add a 2x barlow and centre the donut again. This way when I put the camera in place Jupiter is pretty well focused already.
Obviously it fails sometimes, usually when I can't get on my feet fast enough to get the camera in the focuser. LOLI don't know how this method came about because I always used to focus on Jupiter in the eyepiece/barlow to get the donut on screen. Anyway it works for me at the moment so I am sticking with it!

It never used to bother me either, I often did all-nighters in the frost, but now, at 77, I feel the cold and would rather be inside in the warm! Getting older is no fun,
I will have to take up knitting again.😁
