How to determine best exposure and ISO

I have a film camera and I want to take prime focus shots of deepsky objects. How would I determine the best camera settings prior to taking a shot? I don't like to waste film and don't get to see what results my shots wielded until later after paying to develop them. Am I going to have to guess and check?

Colour or Monochrome?

Slide or Negative?

There may still be info on the web about max exposures before your choice of film starts to overexpose.

ISO will be like a dslr - higher ASA more grainy, but shorter exposures.

Is your mount good enough for long exposures without star trailing?
