Because neighbouring pixels have a different colour filter in front of them (Red Green or Blue). All of the ones that have a Blue one, say, report, a level of 30, and all those that have a Red one report 40, even if they are all looking at a white wall. The Blue ones are arranged in a grid pattern (checks) and the Red ones also (but staggered from the Blue grid).

True raw is NOT only for monochrome cams. The output appears B&W as per that pic, but Aviraw or K3CCD will convert it and put the colour back in, without you having lost detail in the process.
