Depends on a number of factors:

* Weight of the binocular

* Ergonomics of the binocular

* How you hold it

* Your personal definition of "too twitchy"

I routinely use a 1.2kg 10x50 hand-held using the 2nd method in the link above. It is not perfectly jiggle-free, but is more than adequate for things like faint fuzzies and identifying Uranus. Splitting doubles like Albireo is at the limit, though. Any binocular will show more if mounted.
