Saturation How do I know

Hi

Been Imaging for a while now and getting fair results using the kit in my signature. I assume if I was imaging say Vega then as its so bright 600 seconds would be awful and would blow the whole thing out, however if I'm on the Iris Nebula then 600 + would be good. How can I workout the optimum exposure length when I'm imaging.
