I have done a lot of reading up and have had a another go at processing the same avi. I don't think that I have found any more detail in the data, but I do quite like the colours in this version:

I have come to the conclusion that the choice of the final colours for Saturn is a personal thing, but I quite like a little bit of colour difference between the planet and its rings.
