recommend me a humidity switch/plug for my dehumidifier

You could try looking up a 'Manrose 1361'. This is intended for use with bathroom extractor fans.
Unfortunately I have not been able to find a specification from the manufacturer to confirm suitability.
It runs the fan on a timer and humidity. But whether the timer can be disabled, I don't know.
Also I don't know the device switching capability. Switching a little extractor fan is very different to a (big) dehumidifier.
It might need a slave relay.

However, this is not an item you can safely install unless you are happy with mains wiring & controls installation.

The cost is about £65 at Screwfix, just to give you some idea of what you are letting yourself in for.

My observatory dehumidfiier has its own sensor. However, the control knob goes from Desert to tropical rainforest with only a tiny movement.
Time I looked for an external control?

RS Components have a range of hygrostats and humidistats, just one thought, my Meco dehumidifier won’t start if you switch power to it, it still needs you to press the panel on/off button as well each time. 
 

yours may operate differently, more cooperatively perhaps? :0)
