Does anyone have experience of mounting a 120ed and a 200p side by side on a SkyTee-2.

Is it a stable arrangement?

Yes, the mount will handle these two scopes but you will need a counterweight underneath the ED120 (I'm assuming you will use the top mounted saddle for that one) otherwise, as the refractor tips back, it will unbalance the whole rig. Do consider upgrading the saddles as well as the standard ones are not really much cop, to be honest.
