What advantage (if any) would I get by going for a 2" eyepiece rather than 1.25"?

The field of view angle compared to a 1.25 of the same magnification & type is greater with a 2" eyepiece.

With a 2" EP, you have the possibility to give a wider field of view for a given focal length but it depends on the particular EP rather than just the barrel diameter.

None, particularly for shorter focal length eyepieces, However the 1.25" format restricts the eyepiece field stop to about 27mm, limiting the possible true field of view. This in turn restricts the apparent field of view for longer focal length eyepieces. For example, the longest focal length of a 1.25", 68° eyepiece is 24mm.
