One thing I'm wondering with these models (even though they are getting great reviews) is doesn't the fact that the sides of the tube are exposed cause stray light to enter and ruin the image?

I think sometimes stray light does get in, it depends on your surroundings. You can get light shrouds like this one: First Light Optics - Astrozap light shroud for Skywatcher FlexTube to help improve image contrast (and it's also a good way of protecting the mirror / stopping dew).

Under very dark skies it shouldn't be a problem. But as you probably wont always be then it is advisable to buy a shroud.
