What do the different colors mean?

I enjoy looking at the infrared and various other non normal light telescope images out there, and I've noticed that, stars appear in different colors, like green, and whatnot that aren't part of the stars normal colors. My question is, what do the colors usually represent?

If I am not mistaken, such images are stacked from false colour images, each color representing a different imaging settings; all in order to highlight the different structures in the picture. So each color might represent a different temperature, elements, particle radiation etc. Am I right?
