modifying a camera

hi all, i've been working as a photographer for a few years now, and am looking to get a bit more technical in it. the only problem is that most photographers online don't get into the technical aspects of the cameras. i've found that people in the astronomy field have a better technical understanding of cameras.

my question is this,

i have a number of old digital cameras and would like to create a pin-hole camera using the CMOS sensors without using the housing that they originally came in. have you any advice on how to achieve this goal?
