Why is it that after a glorious day, the sun going down = clouds rolling in.....wall to wall clag here now

It's done that every night bar one for the last month here .... Damp airstream. Look for air coming from the south west, it often clouds over in the evening, the sun burns the cloud off again in the morning giving a sunny afternoon.
