I've made some benchmarks of few popular astro processing apps (Nebulosity, PIPP, Autostakkert) and you can see the results on:

It turns out some apps do like lower latency of Intel systems while storage speed does matter as you could expect. For some processing NVMe SSD or a Ramdisk is the fastest.
