There are a couple of other tutorials on Astronomy Shed which talk about the gain settings

Obviously it depends on what you are trying to capture - if it's a planet like saturn start with them as high as they go then back them down until it looks slightly underexposed - with the moon, especially when full then the settings will be a lot lower - however, each session will vary depending on the seeing conditions
