It's effectively the same as turning the colour saturation down to zero. In fact, if you shoot RAW in "mono", you can get the colour back after uploading the computer - just the same as if you'd shot it normally in the first place. All these settings are a total waste of time (and add complexity to the camera), just shoot RAW & tinker with colour balance / saturation / shaprness etc etc in the computer.
