I'm looking for quiet locations in south east England/ isle of sheppy with dark spots and really good views of the stars? Any help?

Looking at Google the Isle of Sheppy has 2 nature reserves on it, Elmley and Swale, and I would expect access roads and somewhere to park up, Either of those should be reasonable. I generally look for RSPB locations as a first option.

If not on IoS then try the Kent Downs ANOB, the ANOB designation usually means minimal light pollution.
