I took this the other night, but when I stitched the 79 frames together, found bits missing ...is there any mosaic sofware available to allow me to ensure all of the object is captured without any gaps? I thought I had captured it all with plenty of overlap.

You can use EQmosaic to control the mount. Input the parameters for you camera's field of view and the software does the rest. You could also try Imerge. You can leave this running in the background and drag and drop each completed avi into the program. Align each mosaic and you should be able to keep track of the progress.
