If you have just bought bearings are they not already greased?  If so you could ask the supplier which grease it is.  Many bearings are greased for life and should be OK as they are.  If you want to change the grease you need to ensure that you have removed ALL the old grease before greasing with the new grease.

If you can replace your mount in the same position as you have it after a nighttime session you should be near enough.  Maybe marks on the ground - some folk have put bricks or tiles in the lawn and chiselled small depressions in them to take the tripod feet.  It will track but may need the occasional "nudge" on the controls to keep the image in the field of view.  If you are taking photos then there is still little problem as the Sun is so bright that exposure times are very short and you will not have an issue.

Work by elimination.  take the filter off and take a frame if they are gone you know it was the filter.  Can you rotate the protective window?  If so do that and take a frame.  If the bunnies have "rotated" as well you know they are on the window.  If they are still there try the same trick but this time rotate the camera.  You should be able to determine which is the culprit(s)

Your camera needs 7.4v not 12v.  You could use an ACK-E10 mains adapter if you had mains available but you don't - so you could try a buck stepdown module like this one HERE .  Just google 12v to 7.4v Buck stepdown converter.  You would need to rig up suitable connections for the camera (maybe steal one from the ACK-E10 unit?  Hope that gets you started.
