Emily Lakdawalla from The Planetary Society Blog is hosting an awesome online classroom for image processing.

This class is targetted at getting the novice started on processing images captured by cameras on board various NASA missions.This is a must see for all beginners in imaging , with the emphasis on processing planetary image data

Emily's blog is fantastic with tons of information and she explores various ways to get involved with space exploration from your chair.

Update

The second class in the series is already available( same link) and is even more awesome.
It dives deep into processing images from the Mars rovers and also Cassini.
